Hello there. Speaking as a teacher--- I understand well how stressful exams and other tests can be. And you are right, the format of many tests lends itself to crunching just before and then failing to retain the information, and testing in general could use some reform.

Personally, I prefer to use testing in a low-pressure form to take stock of my own teaching. How well have I been conveying information? Which students are struggling in what areas? I think that if more teachers removed the pressure to score well and used tests as a way to get honest feedback about their students' progress, they would be more valuable. And even in the flawed format they currently exist in, that information can be gathered, and is useful for helping students improve.

I know that this is probably a much more serious response than you were looking for, but I hope it helps you find some value in seemingly menial activities.
